CULINARY PDO BALEARIC ISLANDS. Olives from Mallorca and Mahón cheese from Menorca.

A Protected Designation of Origin identifies a product originating in a certain place, whose quality or characteristics are mainly due to a particular environment, and where all the stages of production take place in a defined geographical area.

Correos is continuing its series on Spanish regional cuisines, featuring products with a Protected Designation of Origin.

This year it is issuing two stamps on the cuisine of the Balearic Islands, featuring two local products with PDO.

One stamp features Olives from Mallorca. There are three main types of this valuable crop: whole green, split green, and natural black. 

The local green olives are partly fermented in brine according to a traditional method. The split green olives are seasoned with fennel and chilli, and the black olives are dressed with delicious, much sought-after Mallorca olive oil.

The second stamp shows another delicious food from the islands: Mahón cheese from Menorca. This bright yellow cheese with a unique flavour is made from cow’s milk processed at a low temperature. It is salted by dipping in brine and allowed to ripen according to the ancestral customs of the island.

Other products, such as wines from Binissalem and Pla i Levant, as well as Mallorca olive oil, complete the list of products with Protected Designations of Origin.

Others, such as the ensaimada and sobrasada from Mallorca, have the recognition of a Protected Indication of Origin and are a symbol of the islands, recognised around the world.
